I've been wanting to cut down on meat, since there is so much junk in it, and now I believe they irradiate it too? Geesh. Does anybody have any vegetarian recipes that fill you up well? I would avoid too much sugar in it to avoid a low. I dont have much access to organically raised meats around here, except there is an 'all natural' chicken I can buyin the grocery store, but im not sure if that gets irradiated also.

I like making curry with eggplant or zucchini. I don't really use a recipe... just sautee some chopped onions, peppers, and garlic in olive oil, sprinkle on some seasonings (turmeric, cumin, whatever you like in curry), then add the chopped main veggie let it simmer for a while until it is saucy. Sometimes, depending on the veggies, you need to add some liquid- water, broth, etc. Serve with noodles or rice. Tara

a lot of meaty dishes are easy to turn into veg dishes too. i'm the only one in my family who eats veg so a lot of times i just end up having the same dish everyone else is having minus the meat (sometimes, like when we're having spaghetti, i just have to be sneaky and serve myself before my mom adds the ground beef). it's easy enough to replace meat with other vegetables too (back to italian dinner at my home... i could eat the spaghetti with plain old sauce from the jar OR i might cook the spaghetti with some garlic, olive oil, parmesan cheese, and italian seasoning). be creative! sam stern's a celebrity teen chef from england and everyone in my family has loved everyone of the recipes i've made from his books. he doesn't eat veg, but i guess his sisters do/did so you may easily find several veg-friendly recipes (especially if you do the whole "same dish minus the meat" thing. ps: apple slices and peanut butter are my favorite!

This is really yummy. Injudra Ingredients (use vegan versions): 1/2 pound dry brown lentils 1 cup long grain rice (brown ok) 3 - 4 large onions 1/2 cup olive oil salt, pepper and cumin to taste Directions: Use a four quart pan. Boil lentils in two quarts of filtered water. Chop onions and begin sauteing in the olive oil; saute until completely browned (really and truly brown, which will take until the lentils and rice are done). When the lentils begin to get soft, add the rice and spices; cook until the mixture is dry. Pour the onion mixture over the lentils and rice and let the oil seep down through the mixture. Try not to stuff yourself. Serves: 4-10.

I know that low glycemic foods are better because they keep your sugar level more even, so it takes longer to get hungry again. I like lentils to a point, but get sick of them pretty fast, but i think the long grain rice will help. Maybe wild rice, which i like. Perhaps I could get 'beano' when I eat beans. Maybe I will try more beans then. Yes, I am trying to avoid cows dairy becuase I have somewhat of a sensitivity to it. Thinking about giving goats milk a try.

It is good and the onions definitely make the dish. I went through a veggie phase and found that I couldn't go that route due to the blood sugar issues. I am allergic to eggs and soy so it severely limited my options.

A lot of people don't eat eggs or soy, by choice and non-choice (like you). A lot of cuisines like Indian and Ethiopian, tend to be meatless. You can google recipes. It really just depends on what you like! I love lentils, they are so versatile. Cold bean salads, warm stews, as a starch with other vegetables...I mostly just use quinoa now, though. I've never really been into beans. Rice noodles and quinoa.

Do you have a health food store near you? If you're interested in trying different grains, it'd be worth you going in and speaking with them about what's available and how to cook it and stuff. Even just looking at the shelves may give you some ideas. Glamorgan sausages are pretty easy to make, and can simply be substituted for meat sausages ~ or shape them differently to make burgers. Gnocchi is pretty good ~ with a rich tomato sauce or even just butter and fresh grated Parmesan.

I'm a vegetarian and tofu generally soaks up the taste of whatever it's cooked with so it can be really versatile. I like tofu cooked with black beans.
